After the openings of César Lanzarote, Amagatay and Morvedra Nou in Menorca, Annua Signature Hotels has announced its latest chapter: Son Xotano, a Provençal-inspired estate retreat opening August 1 in rural Mallorca, Spain. Located in the inland village of Sencelles, the hotel marks Annua’s first property on the island and continues the brand’s commitment to offering design-led experiences across the Mediterranean.
Set on a 12th-century estate amid olive groves, vineyards and lavender fields, Son Xotano presents a thoughtful renovation of a traditional Mallorcan possessió (an agricultural manor house). The architecture honors the estate’s origins, with thick stone walls, shaded patios and sun-drenched terraces. The property offers 22 guestrooms—14 of them suites—complete with hand-thrown ceramics, reclaimed wood, earth-toned linens and textured plaster walls.

As with any Annua property, gastronomy is at the center of the Son Xotano experience. The estate’s culinary offering is rooted in zero-kilometer, seasonal cuisine, reinterpreting Mallorcan tradition. With ingredients drawn from nearby farms or on-site sources, guests can dine beneath vine-laced pergolas, beside the pool, or in El Celler—a centuries-old stone wine cellar transformed into a grill restaurant.
Note: The hotel doesn’t have a traditional spa, but offers personalized in-room or outdoor massages, meditative nature experiences and stargazing sessions. Son Xotano is also well suited for destination weddings and honeymoons. With its gardens, historic architecture and bespoke service, the estate can accommodate exclusive private events, from intimate ceremonies beneath olive trees to festive gatherings in the vaulted spaces of El Celler.
