Holland America Line is rolling out a refreshed Morimoto by Sea menu across its fleet this fall, setting the table for Chef Masaharu Morimoto‘s hosted Alaska sailing in 2027. The updated menu from the line’s Global Fresh Fish Ambassador debuts first on Nieuw Amsterdam this month and is expected to reach all 11 ships by mid-November.
Clients can find the menu at the standalone Morimoto by Sea restaurant on Nieuw Amsterdam and as a pop-up experience on the rest of the fleet. The refresh leans into Morimoto’s signature Japanese-inspired cooking, opening with his Shokupan Bread Service, a personal take on Japanese milk bread.

New appetizers include Popcorn Shrimp with Morimoto-style gochujang, Vegetable Wonton with Asian sesame garlic chili sauce, and Lobster Miso Soup in a white miso broth; Pork Gyoza, Taco Two Ways, and Sticky Ribs return from the previous menu. On the entrée side, additions include Tan Tan Noodles in a red curry broth with miso-infused ground chicken, a Miso Lamb Chop with kombu-braised daikon and gochujang-infused lamb jus, and Butter Poached Lobster Tail with warm yuzu butter, joining returning favorites Japanese Curry and Morimoto Buri-Bop. An updated Morimoto Sushi Mori, a chef-selected sushi assortment, rounds out the lineup.
“When developing these dishes, my goal was simple: create an experience that feels both exciting and approachable,” Morimoto said. “For me, great food is about more than a recipe. It’s about creating a connection through taste, texture and presentation. I’m excited for guests to experience these new dishes and then join me in Alaska where I’ll have the opportunity to share my passion for fresh fish and connect with guests in a different way.”

The chef joins Nieuw Amsterdam’s May 8, 2027, eight-day roundtrip Alaska cruise from Vancouver. During the Culinary Ambassador sailing, Morimoto will host special onboard experiences giving guests a closer look at his approach to food—likely along the lines of his 2026 Grand World Voyage appearance, which featured intimate dinners, a cooking demonstration, and Japanese cuisine-themed trivia.
